Grilled Jumbo Shrimp With Hummus Avocado Tartar

A waft of sea breeze engulfs your senses as you prepare this jumbo shrimp dish with Kasih hummus and lemony avocado mash tartar topped with tomatoes, coriander and fresh avocado slices.

INGREDIENTS

  • 1/2 pack Kasih Hummus 135 gm
  • 4 jumbo shrimp
  • 1 ripe avocado, peeled
  • 1 tomato, peeled and chopped
  • 1 tablespoon fresh coriander, chopped
  • 2 tablespoons olive oil
  • Butter for frying the shrimp
  • Salt and pepper to taste

DIRECTIONS

  1. Heat the butter and pan-fry the shrimp on both sides until cooked (the colour of the shrimp should change to light orange) or grill the shrimp on a charcoal grill, season with salt and pepper, and place on a serving dish.
  2. Mash the avocado, lemon juice, salt and pepper until they form a paste, then add the hummus and mix well until combined.
  3. Mix together the chopped tomato, chopped coriander, olive oil, salt and pepper.
  4. Place the avocado Hummus at the bottom of a round wring and top it with the tomato mix.
  5. Serve with the grilled shrimp.
