Salmon Fillet on Thyme Hummus

An innovative dish that perfects the culinary art of layering. A gourmet favourite, this salmon fillet rests on a bed of mashed potatoes and is topped with a golden layer of crispy hummus. Serve it with asparagus – Salmon’s best taste companion!

INGREDIENTS

For the salmon

  • 1/2 pack Kasih Hummus 135 gm
  • 1/2 cup mashed potatoes
  • 250 gm salmon fillet
  • 2 tablespoons olive oil
  • 2 tablespoons fresh or dried thyme
  • Pepper

For the mashed potatoes

  • 1 large potato, boiled
  • 2 tablespoons butter
  • 1/2 cup full fat milk

DIRECTIONS

  1. Mix together the Hummus, mashed potatoes, thyme, black pepper, and olive oil.
  2. Spread the Hummus on the salmon fillet and bake in the oven on 160°C until the salmon is cooked and the Hummus forms a crunchy crust.
  3. Top the crunchy Hummus salmon fillet on the mashed potatoes and serve with asparagus.

GARNISH

Garnish with fresh dill leaves.
