Pesto Hummus Chicken Sandwich

A fulfilling, easy and healthy wheat ciabatta sandwich with grilled chicken, ricotta cheese, olives, Kasih hummus and aromatic basil. This protein-infused sandwich is the ultimate fusion of Italian and Arabic cuisines.

INGREDIENTS

  • 1 pack Kasih Hummus 135 gm
  • 1 boiled chicken breast, shredded
  • 50 gm Ricotta cheese
  • 1 ciabatta bread
  • Pesto sauce
  • 1/2 bunch fresh basil leaves
  • 2 tablespoons pine nuts
  • 1/4 cup olive oil
  • 1/4 cup parmesan cheese, grated
  • Salt & Pepper

DIRECTIONS

  1. Open the ciabatta bread from one side.
  2. Season the chicken with salt and pepper.
  3. Prepare the pesto sauce by blending all the pesto ingredients.
  4. With a wooden spoon mix 2 tablespoons of the pesto sauce with hummus.

GARNISH

Ciabatta bread, top with the shredded chicken, a little more pesto sauce and the ricotta cheese.
